Rocky road: How to make the decadent, no-bake dessert

An irresistible, no-bake treat with the perfect combination of sweet and salty, soft and crunchy

Rocky roads are not only childishly tasty – they’re also ridiculously easy to make, and so the ultimate sweet for those with a lack of time. Put your personal touch on your rockies by replacing the flavouring with your favourites, or why not adapt the ingredients to what you have at home – for instance popcorn, dried fruits or cornflakes.

Ingredients

Serves 12

  • 400 g dark chocolate (70 per cent)
  • 1 dl salted peanuts
  • ½ dl pistachios
  • 1 dl marshmallows
  • 1 dl crushed digestive biscuits

Method

Chop the chocolate into rough pieces and place in a bowl over a saucepan of simmering water. Stir occasionally until the chocolate has melted.

Mix the other ingredients together in a bowl. Pour over the melted chocolate and stir until everything is completely covered.

Tip the rocky road mixture into a lined baking tin and spread it out to the corners. Let it chill for at least two hours before cutting into pieces.
