A simple to make spooky 'Lycheetini' to keep an extra eye on

Not a die-hard martini fan? Adding a little sweetness from lychee syrup will win over the pickiest taste buds. Read on for the easy steps to create an 'Eyeball Martini' as a scarily tasty treat this Halloween.
Ingredients
Serves 4
- 10 oz vodka
- 3 oz dry vermouth
- 1 splash lime juice
- Cubed ice
- 1 jar of canned lychees in syrup
- 4 blueberries
Method
- Place four Martini glasses in the freezer to chill.
- Add the vodka, vermouth, two tablespoons of lychee syrup, lime juice and ice into a cocktail shaker. And just like Mr Bond prefers it, this cocktail should be shaken, not stirred. In other words: shake the ingredients vigorously for around 15 seconds and strain into the chilled Martini glasses.
- For the eyeballs, stuff the pitted lychee fruits with blueberries. Place the 'eyeball' on the end of a toothpick and garnish your 'Lycheetini' with it - simple yet scary.
